At the beginning of the quarantine, I saw @busytoddler's Popsicle Bath idea, which I thought was genius! It quickly became a staple in our house - eating popsicles in the bath listening to music (our go-to is Build Me Up Buttercup by the Temptations). It was a great activity where I could just sit for a few minutes and enjoy watching the kids in the tub! And the kids loved it because well popsicles in the bath, what's not to love?

But seeing how we were doing a Popsicle Bath almost daily, I decided to make our own popsicles. And now that the weather has been so beautiful, we've been running through popsicles on the double!

To make popsicles, I usually just make a smoothie with the fruit that we have laying around or in the freezer. But recently, I thought I would get a little creative! Here are three recipes that I've tried and are kids approved! For all of these recipes, I use our Vitamix to blend the ingredients together and disperse into the popsicle molds. Then simply, put them in the freezer for 3-4 hours or until frozen and they are ready to enjoy!

1) Creamsicle

  • 1/2 large navel orange peeled

  • 1 cup orange juice

  • 1/2 cup coconut milk

  • 1 banana

  • orange rind (optional)

2) Pina Colada (makes 8 popsicles)

  • 1 cup frozen or fresh pineapple

  • 1 banana

  • 1 cup coconut milk

3) Strawberry Lemonade (makes 4 popsicles)

  • 2 cup frozen strawberries, slightly thawed

  • juice of 1 1/2 lemons

  • 2 tbsp agave syrup

But let's not let the kids have all the delicious fun! Here is a link to a Margarita popsicle recipe that looks delicious for us adults! Yum! I will definitely be trying this recipe this summer!!

Enjoy the sunshine,
