Mint Jelly

A big part of why I LOVE growing a garden is finding new recipes and ways to use ALL that fresh produce! Over time I’ve collected a bunch of recipes and this one I’m adding to the list - Mint Jelly. My mint has been growing wild and it's great for drinks or salads but for me, mint jelly is a classic. It's something I’ve grown up eating and loving. I usually only have it in the summer, which makes it a little extra special!


I've always been intimidated by making jams and jellies because they seem so elaborate and complicated. I still am intimidated because some jams can be on the more difficult side, but this mint jelly is not hard! The instructions are simple and fairly quick and it has very few ingredients. I have definitely passed by a recipe when the list of ingredients is long...


But you should give this mint jelly recipe a try if you have extra mint lying around! It is so refreshing and light; it's perfect on toast for breakfast or served with brie on a charcuterie board.
